Sausage Balls! A holiday classic.
For me, sausage balls bring back the sweet nostalgia of my childhood days when my dad would make a fresh batch for our family to enjoy while we played Rook for hours on wintery Sunday nights. They’re a classic! And they always make an appearance at holiday gatherings. Now, as an adult with kids of my own, we like to prep them the night before Christmas so we can bake them fresh in the morning to enjoy while we open gifts. There’s just something about sausage balls… warm, fluffy, tender, with a kick of heat to round out the flavor.

Fresh Milled Sausage Balls
1 lb ground pork sausage (we like hot, but any flavor will do)
2 cups of sharp cheddar cheese, freshly shredded is best
2 cups of fresh milled soft white flour (approximately 1 cup of berries, give or take)
1 ½ tsp baking powder
½ tsp baking soda
1 tsp salt
4 Tbsp butter, grated
¼ cup milk
In a large bowl, combine all the dry ingredients. Next, add grated butter and combine until crumbly. Add sausage, shredded cheese, and milk until fully incorporated. Set aside for 30 minutes to allow the flour to absorb the liquid.
In the meantime, preheat oven to 350 degrees. Roll into 24-30 balls and place on a baking sheet lined with parchment paper. Bake for 18-20 minutes or until golden brown and cooked through. Enjoy!
