Khorasan wheat berries come from Triticum turgidum var. turanicum, an ancient variety of wheat that has been cultivated for thousands of years. Often marketed under the brand name "Kamut®," Khorasan wheat is prized for its large, golden kernels and robust, nutty flavor. The grains are significantly larger than those of modern wheat, with a chewy texture and slightly sweet, earthy taste when cooked.
Nutritionally, Khorasan wheat is a rich source of protein, fiber, vitamins (notably B-vitamins like niacin and thiamine), and minerals such as selenium, magnesium, and zinc. Its higher protein content and greater levels of essential fatty acids make it a heart-healthy option. Khorasan wheat also contains more lipids and antioxidants than common wheat, which may offer additional health benefits.
Khorasan wheat berries can be cooked in a variety of ways, similar to other whole grains. When prepared, they have a firm, satisfying texture, making them ideal for use in salads, grain bowls, soups, and side dishes. Additionally, they can be ground into flour for baking, providing a rich, hearty flavor to breads, muffins, and other baked goods.
Because it is less refined than modern wheat and is grown in a more traditional manner, Khorasan wheat is often considered a more nutritious and wholesome choice. Its unique flavor and high nutrient content have led to its growing popularity among those interested in ancient grains and alternative wheat varieties.
