Spelt wheat berries come from Triticum spelta, an ancient grain that has been cultivated for over 5,000 years. Known for its nutty, slightly sweet flavor and chewy texture, spelt is a close relative of modern wheat but has retained many of the qualities of its wild ancestors. Spelt wheat berries are larger than regular wheat kernels, with a distinctive oval shape.
Nutritionally, spelt is highly regarded for its rich content of protein, fiber, and essential minerals, such as iron, magnesium, phosphorus, and zinc. It also contains a good amount of B-vitamins, particularly niacin and folate. Spelt’s gluten content is slightly lower than that of modern wheat, and its protein structure may be easier to digest for some people.
